We have a brand new edition to our maple syrup operation, “The Cookhouse”!
This is where the sap is prepared. Here it is concentrated for hauling . Once a batch is concentrated through the reverse osmosis process it is ready to haul to a large producer. At this point the sap is at approximately 6 % sugar or 6 brix, with about 70% of the water removed. To sum it up 800 gallons of raw sap is converted into 285 gallons of concentrate. The advantages are, 1- fewer trips to my buyer. 2- The load fits on a small trailer. 3- I don’t need a big truck to pull the trailer. 4- less vehicle fuel used. 5- less water to haul!
We also cook up a few gallons of syrup.

The summer after the completion, all equipment was moved out and we applied Rust Oleum Rock Solid floor covering throughout to keep the floors clean and produce a great appearance.
